Hajime Kasuga

As the third generation of Japanese descendants in Peru, Hajime Kasuga has a strong passion for Nikkei cuisine, a fusion of Japanese and Peruvian flavours. After embarking on his culinary career more than 25 years ago, he is not only an experienced and skilled chef, but also a sought-after international adviser for restaurants specializing in Nikkei Cuisine. He opened his first restaurant Hanzo in 2005 and is now in Indonesia and has launched Henshin at The Westin.

Inspiration

Bingata & Sakae Barrels

Bingata is an Okinawan traditional dyed cloth. Traditionally, it was clothing literally fit for a king. Royal courts wore the kimono adorned with representations of nature – fish, water and flowers,   stencilled with dyes made of bark, berries and roots.
